Bitterless Black Malts

Nothing says Schwarzbier like new bitterless Black Malts from Briess. These two new black malts deliver a double dose of bitterless darkness to Schwarzbier, Dark Lager, Black Ale or any dark beer in need of color but no bitter flavors or aftertaste. Use either one to replace debittered black malt in your recipe.
Which one should you use? We recommend you experiment with both! But for a starting point keep in mind that Midnight Wheat Malt is the smoothest source of black color of any malt available. Blackprinz® Malt, meanwhile, delivers color plus more roasted flavor.
What makes Briess bitterless Black Malts smoother than debittered black malts? Debittered black malts are made by removing a great deal of the husk (but not all of it) from the malting barley. Since it's the husk that develops bitter notes during roasting, debittered black malts will contribute a certain amount of bitter, astringent or dry flavors or aftertaste to beer.
Blackprinz® and Midnight Wheat Malts are made from grains that have no such husk to pick up the bitter notes during roasting. The result is bitterless black malts that contribute deep rich browns to black tones with subtle, smooth flavor and no bitterness or astringency. |
